From Ninben, a maker of bonito fish products which boasts a history of more than 300 years, Nihonbashi Dashi Bar is a diner that promotes the traditional Japanese diet of enjoying rice with soup. Here you can try “katsuobushi dashi” (broth made with dried bonito shavings) for just one 100 yen coin, from a menu that changes once a month, along with “katsuobushi meshi” (bonito flakes over rice) and a variety of other side dishes all made with the characteristic broth.
